I would think any pumpkin or spice cookie would qualify for a Thanksgiving cookie.

DiAnne Spice cookies sound great also can be neutral if someone should not like pumpkin. Woman Happy

yes, we had thanksgiving cookies.....

 

sugar cookies in the shape of turkeys, leaves, and acorns. they are sprinkled with brown, gold, and orange sugar. sorry......no acorns left to photograph.

 

shortbread cookies in the shape of a crescent moon and drizzled with chocolate.

I guess anything can be called anything.   I don't really bake for holidays so it's all the same to me.  Smiley Happy

 

But, wow!  One of my neighbors sent over some cookies last month, with my husband. O-MG!    These were so awesome - right up my alley, as I like soft cakey type cookies.

 

They were these  pumpkin cookies with some chocolate chips in there and some pecans on top.  They were large and beautifully soft, but so tasty.  I hope I can get the recipe, if she shares.  If not, that's ok.
