Baked Chipotle Cheddar Sweet Potato Chowder

Ingredients

  • 6 slices thick-cut bacon chopped
  • 1 yellow onion chopped
  • 4 cloves garlic chopped
  • kosher salt and black pepper
  • 2 tablespoons salted butter
  • 1/4 cup all-purpose or gluten free flour
  • 4 cups low sodium bone broth or vegetable broth
  • 1/2 cup apple cider
  • 4 sweet potatoes, peeled and chopped
  • 2 cups milk
  • 1-2 tablespoons chopped chipotle in adobo (1 tablespoon chipotle chile powder)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/3 cup plain greek yogurt or sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup fresh cilantro, chopped
  • chopped green onion for serving

Instructions

  • 1. Cook the bacon in a large Dutch oven over medium heat until crisp, about 5 minutes. Remove from the pot and reserve the bacon. If there's excess bacon grease, drain off all but 1 tablespoon. 
     
    2. To the same pot, add the onion and cook for 5 minutes, until fragrant. Add the garlic. Stir in the butter and flour, cook for 1 minute. Pour the broth and cider over and stir in the sweet potatoes. Partially cover and simmer over medium heat for 15-20 minutes, until the sweet potatoes are very soft. Use a potato masher or fork to mash the potatoes. I like to leave my soup chunky and do 1/3 of the potatoes.
     
    3. Stir in the milk, chipotle, chili powder, paprika, yogurt/sour cream, and cheddar cheese. Cook for 5-10 minutes, until the cheese is melted. Remove from the heat and stir in the cilantro. If needed, thin with additional broth.
     
    4. Ladle the soup into bowls. Top, as desired, with yogurt/sour cream, cheese, cilantro, and green onions. Adds lots of bacon. Eat and enjoy!

Sweet Potato With Ginger Soup

  • 2 tablespoons olive oil

     

     

  • 1 ½ pounds peeled raw sweet potatoes, cut into 1-inch chunks

     

     

  • 1 large onion, cut into large dice

     

     

  • 1 tablespoon butter

     

     

  • 1 pinch sugar

     

     

  • 3 large garlic cloves, thickly sliced

     

     

  • 1 ½ teaspoons ground ginger

     

     

  • ½ teaspoon ground nutmeg

     

     

  •  teaspoon cayenne pepper

     

     

  • 3 cups chicken broth, homemade or from a carton or can

     

     

  • 1 ½ cups half-and-half (or whole milk)

     

     

  • Salt and freshly ground pepper, to taste

     

     

  • Garnish: chopped honey-roasted peanuts

  1. Heat oil over medium-high heat in a large, deep saute pan until shimmering.

     
  2. Add sweet potatoes, then onion; saute, stirring very little at first, then more frequently, til vegs start to turn golden brown, 7 to 8 mins.

     
  3. Reduce heat to low & add butter, sugar & garlic; continue cooking til all vegs are a rich spotty caramel color, about 10 minutes longer.

     
  4. Add ginger, nutmeg and cayenne pepper; continue to saute until fragrant, 30 seconds to 1 minute longer.

     
  5. Add broth; bring to a simmer over medhigh heat. Reduce to low & simmer, partially covered, til sweet pots are tender, about 10 mins.

     
  6. Using immersion blender puree until very smooth, 30 secs to 1 min. Return to pot add enough half-and-half so the mixture is souplike, yet thick enough to float garnish. Taste, & add salt & pepper if needed. Heat through, ladle into bowls, garnish and serve.

Years ago I made a tasty soup with lentils, ham and sweet potatoes.  The rest of my family was not a fan, so much of the soup went in the freezer and took forever for me to eat all of it.

Most people make Sweet Potatoes in a spicy or sweet dish.

 

If you haven't tried savory Sweet Potatoes, please give it a try!

 

They are delicious roasted and seasoned.  I put salt on my fries!

Sorry about the links on my soup posts...I actually proofread and still missed them.

 

 

However, I believe you deleted the other Soup Thread in error.

 

It was not a duplicate.

 

 

This thread is about Sweet Potato Soup...the one you deleted was about reg Potato soup.

 

If there is anyway to restore it....

@gloriajean    Well it looks like they made a mistake by removing the thread on regular potato soup as a duplicate.  I don't see how they couldn't tell they're two very different soups lol.  Hope you were able to grab screenshots of the recipes.  I went back looking to get some from other posters only to find it was gone.😔

I throw leftover sweet potatoes in just about any veggie soup I make. Delicious.

 

Also, someone mentioned an African soup with sweet potatoes. A local restaurant makes a peanut sweet potato soup. It is their claim to fame and very good. I see several recipes online. That's if you don't have a peanut allergy problem.

You could also roast them with a little olive oil and salt and pepper and then take it from there.

 

Either eat them roasted or add to a soup recipe.  Having the carmelization via roasting will add depth to the flavor.

I'm not sure, but you may be able to post asking the mods to restore it since they're totally different things.
