Is there a Sweet Potato Soup?

I have a bunch of Sweet Potatoes so was thinking of a soup with them too. Anyone know of a recipe for them that is tried and good?

I add sweet potatoes  in my butternut soup--along with a carrot. Tastes pretty good.

A friend who is a very good cook had a recipe for an African soup with sweet potatoes.  Unfortunately, l lost it.  Perhaps Google has one or more in their catalog.

Never heard of sweet potato soup. I hope you find something I love sweet potato and butternut squash.

I make this recipe I copied off of an episode of "America's Test Kitchen" many years ago:

 

4 tbsp butter

1/4 cup chopped red onion

1 tsp dried thyme

4 1/4 cups water

2 lbs sweet potatoes, peeled

1 tbsp brown sugar

1/2 tsp cider vinegar

1 1/2 tsp salt

1/4 tsp pepper

 

Halve potatoes lengthwise and slice 1/4" thick.

Saute onion and thyme in butter in big saucepan until softened.  

Stir in water and bring to simmer.

Take saucepan off heat and stir in potatoes.  Let sit for 20 minutes.

Stir in sugar, vinegar, salt, and pepper.  Bring to simmer, cover, and cook over  medium-low heat until potatoes are soft.

Puree in blender in batches until smooth.

Sweet Potato and Crab Soup

This sweet and savory soup is quick and easy to prepare. You can substitute butternut squash or pumpkin for the sweet potatoes, depending on what you have on hand. —

Ingredients

  • 4 tablespoons butter, divided
  • 2 medium leeks (white portion only), finely chopped
  • 3 garlic cloves, minced
  • 4 cups cubed peeled sweet potatoes (about 1-1/2 pounds)
  • 1 teaspoon salt, divided
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 5 cups vegetable stock
  • 2 cups heavy whipping cream
  • 4 teaspoons fresh thyme leaves, divided
  • 12 ounces lump crabmeat, drained
  • Croutons, optional

Directions

  • In a Dutch oven, heat 2 tablespoons butter over medium heat; saute leeks and garlic until leeks are tender, 4-6 minutes.
  • Stir in sweet potatoes, 3/4 teaspoon salt, cinnamon, cayenne and stock; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 15-20 minutes.
  • Puree soup using an immersion blender or cool slightly and puree soup in batches in a blender; return to pan. Stir in cream and 2 teaspoons thyme; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes.
  • Meanwhile, in a large skillet, melt remaining butter over medium heat. Add crab and the remaining salt and thyme; cook 5 minutes, stirring gently to combine. Top servings with crab mixture and, if desired, croutons.
Nutrition Facts

1 cup: 370 calories, 28g fat (18g saturated fat), 124mg cholesterol, 994mg sodium, 20g carbohydrate (5g sugars, 3g fiber), 11g protein.

I believe this is from the boards, but like a dummy, I neglected to list the poster

 

REMOVAL OF LINIK

1 pound boneless skinless chicken thighs, cut in 3/4 inch dice
3 T unsalted butter
1 red bell pepper, chopped
1 large onion, diced
2 garlic cloves, minced
2 large sweet potatoes, peeled and cut into 3/4 inch dice
4 cups chicken stock (preferably homemade)
**2 canned chipotle chiles in adobo sauce, finely chopped
**2 t adobo sauce
1 - 15 oz can creamed corn
1 cup fresh corn or frozen corn thawed
2 cups half & half
salt and pepper to taste
3 T chopped fresh cilantro for garnish

 

Heat butter in soup pot. Add chicken and cook until opaque.

Add pepper, onion and garlic. Cook stirring frequently until onion is translucent.

Add sweet potatoes, stock, chipotle chiles and adobo sauce to pot and stir well.

Bring to boil, then reduce heat and simmer on low covered for about 35 minutes.

Add the creamed corn, corn and half & half and simmer for 5 minutes. Season to taste with salt and pepper. Sprinkle each serving the cilantro.

**I typed the recipe as given but I reduced the chipotle chiles to one and 1 t adobo sauce. We like spicy food but not hot food.

Creamy Sweet Potato Coconut Soup Recipe

The coconut milk adds a silky sweet nuttiness

Ingredients for Sweet Potato Soup:
8 oz (1/2 lb or about 6 strips) bacon, diced
1 medium onion, diced (about 1 cup)
2 garlic cloves, minced
1 large celery stock, diced
2 lbs (3 medium) sweet potatoes, peeled and diced
1/2 tsp dried thyme leaves
4 cups reduced sodium chicken broth
1 cup coconut milk (I used “original”)
2 tsp salt and 1/8 tsp ground black pepper, or to taste
2 Tbsp parsley to garnish, optional

 

Creamy Sweet Potato Coconut Soup Recipe

Instructions

  1. In a large pot, or French Oven, over medium heat, cook bacon in it's own fat until crisp (8-10 min). Remove with a slotted spoon to a paper towel-lined plate. Leave 3 Tbsp oil in the pot; discard excess or leave it in there for a more flavorful soup.
  2. Add chopped onion, and celery and cook 4 min or until soft, stirring occasionally, then add 2 pressed garlic cloves and saute another minute.
  3. Stir in diced sweet potatoes, ½ tsp dried thyme leaves and 2 tsp salt. Now pour in 4 cups chicken broth, partially cover and simmer 20 min or until sweet potatoes are easily pierced with a fork.
  4. Puree soup until smooth. I accomplished this in two batches in my Blender. Return soup to pot and stir in 1 cup coconut milk, or add it to reach desired consistency then season with more salt and pepper to taste if desired. Serve in warm bowls. Sprinkle the tops with bacon and garnish with chopped parsley, if using.

Great tip from my husband Vadim: To partially cover with lid, place a wooden mixing spoon across one side of your pot and place your lid over it. This way the lid won’t hang over the edge and drip onto the stove and the lid is less likely to shut closed unexpectedly causing your pot to boil over.

SWEET POTATO CHILI

 

1 can (30.5 oz) mild red chili beans (with sauce)

  • 1 cup vegetable broth
  • 2 Tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes, with liquid
  • 1 small onion, diced
  • 2 sweet potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 2 tsp paprika
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 1 tsp liquid smoke

 

Directions:

  1. In a large crockpot REMOVAL OF LINK add all the ingredients. Stir and cover. Cook on low heat for 6-8 hours, until sweet potatoes are tender. ENJOY!
