Irish Casserole - in August!

This is one of our favorites, but I make it only in March (maybe late February). Since DS hasn't had it in a while due to his being away at college, he asked me a few days ago if we could have it. So I made it!

 

I didn't make anything for Christmas in July. Did any of you? Do you ever make a traditional holiday dish any other time during the year?
