I have not made this dish before, but it's another potato recipe going on my to-do list. I like this recipe for the potato pancake part, which looks like it would be crunchy goodness all by itself.
This recipe calls for sauteed mushooms and an Irish Whiskey gravy. I will do the mushrooms (in the oven) but I probably won't make whiskey gravy (I wonder if bourbon would work). The recipe author says you can replace the whisky w/ equal amount of broth/stock.
I think this would pair well w/ chicken schnitzel and make enough gravy to pour over the chicken. I know...not Irish, but tasty.
Irish Boxty Potato Pancakes Recipe - From A SPICY PERSPECTIVE
Ingredients
For the Potato Pancakes:
3 cups frozen hash browns, thawed and roughly chopped
1/4 cup all-purpose Gold Medal Flour
1/4 cup Parmesan cheese
3 tablespoons chopped chive
2 large eggs
1/2 cup heavy cream
butter, for frying
For the Sauteed Mushrooms:
1 pound mushrooms, button or crimini, sliced thin
2 tablespoons butter
1 clove garlic, minced
1 tablespoon fresh thyme leaves
1/4 cup sherry
For the Whiskey Gravy:
2 tablespoons butter
2 tablespoons all purpose Gold Medal Flour
1/4 cup Irish whiskey
1 cup beef stock, or vegetable stock
1 tablespoon whole grain mustard
salt and pepper
Instructions
Chop all the herbs and veggies and set aside. Place two skillets over medium heat. In a mixing bowl, mix all the ingredients for the potato pancakes, along with 1/2 teaspoon salt and 1/4 teaspoon ground pepper.
In one skillet, add 2 tablespoons butter, followed by the mushrooms, garlic and thyme. Stir and allow the mushrooms to often a bit, then salt and pepper to taste. Add the sherry. Continue cooking, stirring occasionally, until the sherry is completely adsorbed and the mushrooms start to caramelized.
Meanwhile, place a small pat of butter in the second skillet. Swirl the melted butter around, then add 1/2 cup potato batter. Cook until the bottom is golden and the sides are firm. Then flip and continue cooking, 2-4 minutes per side. Repeat with the remaining batter.
Once the boxties are finished cooking, add 2 tablespoons each of butter and flour to the same skillet. Whisk and bubble for 1-2 minutes, then add the Irish whiskey, stock, and mustard. Continue whisking the gravy until your desired consistency is reached. Salt and pepper to taste.
To serve: Place one boxty on each plate. Evenly distribute the sautéed mushrooms on top of each boxty and fold over. Pour warm gravy over the potato pancakes and serve immediately.

Boxtys are delicious! I've never made them but that's what I order when we go to an Irish pub. I might have to try out this recipes and see how I do. Thanks for sharing.

My Irish grandma made a similar dish with leftover mashed potatoes. She stirred in shredded fresh potatoes, flour, and milk to make a sort of batter. They were cooked in a skillet in lots of butter. We ate them with more butter on top. A yummy childhood memory.

I've made potato pancakes from mashed potatoes before ... but they were not crunchy or pliable ... good though.
Your grandmother's version sounds much better than what I have made. I think in part, because of the addtion of the shredded potatoes. I never thought to do that w/ mine.

@kate2357 The boxty I had at a somewhat authentic restaurant was more of a pancake consistancy, not a shreded potato mixture. It was stuffed with chicken, covered with a cream, lemon and caper sauce. It was delicious. It was made by McFarland and Sons, and I believe it was authentic. Try to search out authentic recipes, this looks more like a potato latke.

I am fine with a latke type of potato pancake. When looking up this dish, I read there were many different recipe variations, but the primary ingredients were mashed and grated potatoes.
Lemon caper sauce sounds like wonderful sauce to serve over a boxty.
Boxty is a traditional Irish dish made of mashed and grated potatoes in a thick buttermilk batter that are pan-fried. What is this? It is a bit like a cross between a hash brown and a pancake.
