Here's another EASY one for all you vegetarians or those you know (hi, bow!). I must confess, I haven't made it in a while, but exact ingredients don't really matter, as it is really "to taste." Supposedly, as my family history goes, it is an old Romanian recipe, from my great, great grandma.
Place a small or medium eggplant (skin and all) directly on top of gas burner. Allow the flame to char one side of the eggplant, then rotate eggplant until all sides are charred and eggplant is soft. (This will be a little messy!) When eggplant is cool enough to handle, put on a plate and "peel" skin away with fingers or fork. Scoop out the soft insides and place in bowl. Discard skin. Add about 1/2 small chopped onion and about 2-4 tbsps. canola oil. Salt, pepper to taste. Mix well. You can eat plain, but it's delicious on crackers or toasted bread. [Note: You can roast the eggplant in the oven, but it won't have that "roasted" flavor.]
