Ina's Pasta, Pesto and Peas Recipe

[ Edited ]

I've decided to make this salad for my upcoming luncheon.

I will have grilled chicken and shrimp as optional add-ins, as well as a fruit salad and bread sticks.

I want to keep lunch simple, because the focus is on the tea party desserts.

Am I missing anything obvious?

@house_cat , your luncheon sound delicious, and perfect as you described it. You sound like a wonderful hostess.

Thank you for the feedback. I always feel like I'm forgetting something, but it's lunch and I don't want to overwhelm anyone with too much food.

Something sparkling to drink would be lovely - the menu is delightful and truly I'm sure you have all your bases covered.  I was just mentally enjoying it.

@house_cat - Your menu sounds great! And just in case you've never made this recipe before, it is truly delicious. We also sometimes add chicken like you're doing to make it a more substantial dish.

Sounds perfectly lovely! How about mimosa or mint juleps regular or virgin? That pasta salad looks delicious. I would be happy eating the whole bowl.

a non-alcoholic sparkling champagne/wine, or cider would be a nice compliment, or a punch.... are you inviting all of us? 😀 yum, it looks good!

I wish I could have all my forum friends here for tea!

How much fun would that BE?!

I usually serve pink lemonade, iced tea and infused water, but something sparkling would be lovely, too.  We're an alcohol-free household, but I'd love some sparkly recipes if anyone has one to share.

Thank you.

@loriqvc

I'm glad to hear that you've tried it and approve. I've made many variations of pesto pasta, but this one has mayonnaise. Almost all of the reviews were glowing, but one or two said "greasy" or "heavy" and that had me a little concerned.
