If you use fresh rosemary be careful.  It can be overpowering.

@Mom2Dogs   Glad I could help.  For a one and a half minute video to explain this more clearly Epicurious dot com has a good one under their How Tos which is called How to put butter under a turkey breast.

 

By the way, I do the same thing when I roast a chicken.   Remember to pull it out of the oven and let it rest a good thirty minutes before carving.  Hope your turkey turns out delicious and not dry.

Thank you. I think putting the butter under the skin is a good idea. I will try that Thursday, along with butter on the outside.


So...to put the butter under the skin of the turkey, do I just make small slits all over the breast and tuck in the butter?

I wear food safe gloves. I lift up the skin & have to stuff it in there. Kind of a pain but worth it. We are going to inject it with Tony Chachere's Creole Butter.
