I'm pretty well set on my Thanksgiving menu, but I'm looking for 1 different sides dish. So far it's turkey with all the usual trimmings, 2 different potatoes, white and sweet mashed, corn pudding, green beans and something yummy you may suggest. Dessert will be pie, pumpkin quick bread (from a mix) and whatever my BIL brings.
I'm making a turkey breast in my Instant Pot and just can't wait to cook. All that I've read says 6 min/lb. so it will be cooked (I hope) in 42 minutes. Sounds unbelievable.

You don't have fruit or a salad, so I am going to suggest ambrosia fruit salad
This is my recipe. I have taken mine from one someone gave me and I do it this way. You may want to adjust yours accordingly. Add ingredients one at a time slowly to make sure it is not too much or too little.
1 thawed 16- oz cool whip
2 c shreeded coconut
½ to 1 cup chopped nuts
8 oz drained fruit cocktail
11 oz drained mandarin oranges
2-3 cups miniature marshmallows
8 oz drained pineapple chunks
10-oz drained maraschino cherries
1 t ground nutmeg
1 t ground cinnamon
Place covered with handiwrap in fridge for a few hours before serving. I submitted that a few minutes ago and realized afterward I had pasted, that I did not copy correctly. I think it is right now.

Whether you make your own cranberry sauce or get the whole berry one in the can, add some Grand Mariner orange liqueur. I learned this from Bobby Flay, and it is delicious. Liquor stores usually have really small bottles, if you don't want to invest in a big one.

If you want a very special salad, something I make for get-togethers and I am asked every time for the recipe. I have never known anyone else who made this recipe. I got it from a restaurant while on vacation 30 years ago. I don't know the actual name but the lady who gave me the recipe owned the restaurant and was writing a book of recipes which I followed and purchased at its publication. Like J peterman with his clothing, her commentary was delicious with each recipe. Some very unusual recipes. I think someone wanted that recipe book so bad they took it without my permission. She made some comments about the way millionaires walked and how they became beggars after they tasted this salad. I wish I could remember or could find my cookbook.
Millionaire shrimp salad
2 c mayo
1/2 c horseradish
1 tsp salt
2 tsp dry mustard
1 Tbsp fresh lemon juice
2 lbs medium shrimp cleaned, deveined, cooked
1/2 head cauliflower cut in bite sizes
1 basket small cherry tomatoes
1 can (7-3/4 oz) pitted ripe olives
1 (8 oz) can whole water chestnuts
1 jar whole mushrooms (4.5 oz)
1/2 bunch broccoli florets
Mix mayo, horseradish, salt, mustard well. Add all other ingredients except broccoli and cauliflower. Chill overnight. Add broccoli and cauliflower 1-2 hours (and chill again) before serving. (12 servings)
Easy peasy and delicious!!!!

@Nonametoday What a fabulous recipe. I am going to make this before Thanksgiving--sounds so delicious that it would be great for a nice lunch or dinner.
How sad that someone swiped it from you. What state were you vacationing in? Might help you locate the restaurant's name and a second hand copy of the book online.
If the rest of that lady's recipe are as good as this one I'd love to get a copy.

I have tried without any success to recall the name of the restaurant. It was in Tennessee. We had gone to the Biltmore and we were headed home and decided to take a road off the beaten path and ran into the neatest little boutique community up on the Blue Ridge Parkway, Blowing Rock. I have not been able to find the name of the restaurant. Seems that area changed and some restaurants went out of business and it's a newer generation now.

My mother frequently served a fruit salad, so easy, and everyone ate it until it was gone.
Fruit Salad
(add the quantity of each ingredient to the amount you like)
canned mandarin oranges, drained (at least 3-4)
peeled and chopped apples (try 2-3)
stemless maraschino cherries, drained (1 Jar)
walnuts or pecans - optional
sliced bananas
sugar
booze - (your choice of one) suggestions are rum, whiskey, bourbon, etc.
Mix the the oranges, apples, cherries, and nuts in your serving bowl the night before.
Sprinkle with sugar.
Lace with booze.
Refrigerate.
Just before serving, peel and slice bananas.
Mix and enjoy.
Note - If you don't tell anyone there is alcohol in it, people will eat it up, even "little old ladies" who never touch a drop. I have had people fight over the left over "juice" from the fruit. Do not drown the fruit in alcohol, just add for flavor.

You don't have anything "sweet" for the main course to balance the savory tastes and textures except for sweet potatoes, so I would suggest either of these two recipes. The red color of either salad will be beautiful with the rest of the colors, and both recipes are so good! (And easy)

Roasted fennel & carrots & white onions with Montreal seasoning on them & a dash of fennel seed . Cut fennel & onions in thick slices . Toss all the vegetables in oilive oil . then season all vegetables with MCCormick Montreal steak seasoning & a dash of fennel seeds . You can bake in the oven 350 degrees till tender & brown . Turn them over midway .

Well you don't need more veggies, so cranberries or a fruit salad would be perfect. Some quick bread or rolls would look nice at your table or buffet too.
