Here’s a side dish that we like for a change from the usual veggies. It has a sweet-tangy flavor that pairs well with poultry and pork. 

 

ROSEMARY-GLAZED ONIONS

 

3 pounds small white onions (I use defrosted frozen pearl onions)

 

1/4 cup butter

1/3 cup sugar

2 tsp. lemon juice

1/2 tsp. dried rosemary leaves

 

1. If using fresh pearl onions, peel and cook in an inch of salted boiling water until tender. If using frozen onions, defrost ahead of time and refrigerate until you’re ready to use them.

 

2. In a large skillet, combine butter, sugar, lemon juice and rosemary. Stir over medium heat until the sugar dissolves and the mixture comes to boiling. 

 

3. Add onions. Cook uncovered about 5 minutes, turning onions several times until well glazed.

 

Makes 10 to 12 servings.

@Nonametoday  Just a suggestion to consider.   People on this board are so helpful and knowledgeable. Why don't you ask if anyone from the TN area would know the name of this restaurant and/or the book.  Bet someone will know.

 

Also, thanks for your shrimp salad recipe.  Sounds delish.

You know, I lied about that.  It is in North Carolina, not Tennessee.  We were supposed ot be going to some place in Tennessee, but took the wrong road and got to that place called Blowing Rock.  I bet someone from North Carolina might know.  If I would just get my states, right.  LOL.

There's always enough starch but vegetables get the back seat.  This can be cooked ahead and rewarmed beautifully!

 

Children love this one as well as adults!

 

 

Spinach Quiche (Crustless)

 

Preheat oven to 350 degrees

 

1 Tbsp. Oil

1 lg. onion, chopped

1 pkg chopped, frozen spinach, all water squeezed out

        I put in a colander and press with a spoon.

5 eggs

¾ lbs Muenster cheese, grated

Salt, pepper

 

Preheat oven to 350 degrees

Spray pie plate

Heat oil in skillet over med heat

Add onion cook only until clear

Add spinach, cook only until excess moisture is out

Let cool.

Beat eggs in bowl with fork or whisk.

Add cheese,  and salt, pepper to taste

Stir onion, spinach mixture in.

Pour into sprayed pie plate

Bake 40-45 minutes until lightly brown.

Serves 6 adults as a side vegetable.

I was just about to say Blowing Rock is in N.C. LOLLOL!

We would go skiing there every year at Sugar Mtn. or Beech Mtn.
