This is an old family recipe that I still like to make.

 

Small pkg of lime jello with a cup of boiling water to melt, than 1/2 cup cold water and put in the fridge until it's half set.

Cream together 4 oz cream cheese, smallest carton of whipping cream already whipped, sweeten with sugar and vanilla, add 8 oz of crushed pineapple drained.  Blend together then add to half set jello.  Then let it set until firm.

At 77, I remember this from Chemistry class, but not the name of the component responsible.  ( bromide ? )

You are correct, however, CANNED pineapple will work.  The canning process changes the chemical.

One from a zillion years ago.

 

Strawberry jello, make per package instructions.

1 8-12 oz pkg frozen strawberries - thawed (you could use fresh that are sliced if available). They are for flavor and texture. 

1 small container of cool whip, thawed

 

When jello is softly set, add thawed strawberries and thawed cool whip and whip/beat w/ your hand mixer, until combined. Doesn't take long, maybe a minute or two. Put back in fridge for an hour so it sets up. We called it strawberry bavarian. I think I learned how to make in High School Home Ec. So a LONG time ago.

 

I would like to add I wish you and your husband well. What you're going through is so very difficult. Your wanting to help your husband find food he can eat and enjoy is meaningful. You are showing your love through your actions and your stength.

@walker- I made finger jello for every classroom party when my dtr was in elementary school and the kids loved it.  Never made it in layers.  Please post the recipe.  Do you remember Jello 123 in the box? When it was made it came out in layers!  I miss it.

My brothers and I loved Mom's holiday jello dessert:  cherry jello, drained fruit cocktail, sliced bananas, and pieces of coconut toasted marshmallows.   Anytime we saw that large covered pink bowl in the refrigerator, we knew there was jello.   We always finished that jello long before the bananas got dark!   

 

Anytime my brothers and I talk about Moms cooking, and our favorite things, this jello salad is always the first thing mentioned.   Sadly, dementia has taken this memory away from Mom.

@WORKING GAL ....hi....I did post recipe above ...called Rainbow Gelatin Cubes....very good....little different than regular Finger Jello.  I don't remember Jello 123 that you mentioned.  Even as an adult I still enjoy Finger Jello....quick snack.

Fresh pineapple is a no no, canned is fine.

I make sugar free jello for DH who must avoid sugar. I make three servings from one small box and pour into 3 of the 8 oz lock&lock bowls and put in fridge. He likes it plain with some rediwhip on it. Sometimes he puts some fresh blueberries on top. I usually make cherry, orange, or strawberry. I do the same with sugarfree pudding. He likes sweet at night so this is something he can have all the time.

@walker   aww, thank you 'walker'....delivery would have been nice !  I certainly do appreciate the recipes and  excited that I can fix him something he will eat.
