@sarahpanda I don't do much with jello,except make a jello cake with coolwhip.everyone loves it!

@rms1954   I think I'll take your advise and use a little less water - I bet that will do the trick !

Here's that salad everyone went crazy over!

 

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro gelatin salad made by husband's grandma for many holiday meals.

 

NGREDIENTS
SCALE1X2X3X
  • 1 cup crushed pineapple (drained with juice reserved)
  • 1 cup water (more or less depending on what’s needed, see instructions below)
  • 2 packages lime jello (3 oz each)
  • 1 cup mayo
  • 1 cup evaporated milk (canned)
  • 1 cup small curd cottage cheese
  • 1/2 cup walnuts (chopped)

INSTRUCTIONS
    1. In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
    2. Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
    3. In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
 
  1. Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
NOTES

–To avoid waste, I often add all of the drained crushed pineapple from the can into this recipe, even if it’s more than a cup, and if I don’t need the leftovers for anything else..

@sarahpanda  .... all I can say is I am so impressed with the outpouring of concern here with numerous recipes for you.  Certainly hope that lots of jello for your DH puts a smile on his face.   Friends here are the best!  Stay strong!

I am sorry for this journey that you and your husband are going through.

It sounds like you take good care of him and find things he will enjoy.

I know this is the simplest of simple but our favorite that my mother would make often was just jello and sliced bananas, mixed in the jello.

It is soothing and easy to digest and not a lot of chewing.

And if you think he might like marshmallows, that is another mixed in that is nice too.

He is going to be surprised with all these jello recipes!

First of thoughts & prayers with you & spouse during these times🙂

 

I can't add any recipe because the ways I like are already given but I make 2 different flavors and pour into 2- 8x8 to chill and set,

 

then I cut into cubes.  This is my "go to" snack instead of chocolate just "pop a few cubes" and my craving is satisfied & quick treat🙂
