I would make some really good baked beans; they are always a crowd pleaser as long as they aren't just dumped out of a can.....you can transport them in disposable aluminum pans (double them). I am going to a cookout tomorrow and was asked to bring all the burger fixings so I will transport the lettuce, onions, etc. in one of my big L&L containers that has a lid and handle. I am also taking an ice cold watermelon that I will cut and put in another big L&L bowl, and sit it down in a cooler. It is so hot here the heat index tomorrow will be around 110...so it will be more of a "cook in"  than a "cook out".

Baked beans.....if I didn't have much time, I'd buy 2 or 3 large cans of Bush's baked beans - put them in an aluminum pan, add a couple slices of slightly pre-cooked bacon on top and bake them. I know that's the easy way, and some would rather make something home made. Either way, you can't go wrong with sweet and smokey baked beans! They're good either hot or room temperature.

Lemon and Grape Salad

2 cups bowtie pasta

1-1/2 cups lemon yogurt ( I buy two- 6 once containers of dannon or yoplait )

1/3 cup mayo

2 tsp. lemon juice

1 cup seedless grapes cut in half

1/2 cup finely diced celery

red onion finely diced

Cook pasta according to box directions. Chill in cold water and drain. In a lg. bowl combine yogurt ,mayo, and lemon juice Mix well. Stir in pasta, grapes, onions and celery. Chill overnite.

BLT Pasta Salad

12- ounce bowtie pasta

1 romaine heart, washed and dried, thinly sliced

1 lb. bacon cooked crisp and crumbled

2 cups cherry tomatoes, cut in half

1 small red onion, quartered and thinly sliced

3/4 cup ranch dressing

1/2 cup mayo

1/4 cup sour cream

2 Tbsp. milk

1 Tbsp. lemon juice

1 tsp. garlic powder

Salt and pepper to taste

Cook pasta according to box directions, drain in a lg. bowl. Toss  together  pasta, lettuce, bacon, tomatoes and onion. In another bowl, Mix together ranch dressing, mayo,  sour cream and milk, lemon juice and garlic powder. Season with salt and 

pepper to taste. ** Can double or Triple recipe for larger crowds.**

3 Bean Salad

2 cups cut green beans

2 cups dark red kidney beans, rinsed and drained

2 cups white beans rinsed and drained

1 med. onion chopped

1 med. green bell pepper chopped

 Toss  with Italian dressing and salad supreme.

Creamy Cucumbers

3-4 cukes thinly sliced

1 cup sour cream 

2 Tbsp. vinegar

1 Tbsp. sugar

1 tsp. salt

1 tsp. dried dill

Mix together sour cream, vinegar, sugar, salt and dill. 

Toss  with cucumbers, until well coated. chill.

Yes , can't go wrong with brownies. Even store bought sugar cookies with holiday sprinkles. My favorite take along in the past.

This orzo salad travels well and doesn't contain any mayo or other dairy.  It always gets great reviews and many requests. 

 

Orzo Salad 

4 cups chicken broth

1 ½ cups orzo

1 (15 oz) can garbanzo beans, drained & rinsed

1 ½ cups grape tomatoes, halved

¾ cup chopped red onion

1 can black olives drained and sliced (I have also used a combo of calamata olives and black olives) 

½  cup chopped fresh basil leaves

¼ cup chopped fresh mint

 

¾ cup red wine vinegar dressing as follows:

 

Red wine vinegar dressing ( mix all the ingredients below with a whisk)

½ cup red wine vinegar

¼ cup fresh lemon juice

2 tsp honey

2 tsp salt

¼ tsp fresh black pepper

3/4 cup extra virgin olive oil

-----------------------------------------------------

Boil chicken broth then add orzo. Partially cover pot until orzo is tender but still firm about 7 mins..stir frequently.   Drain orzo and put in large bowl. Toss to cool slightly. Set aside to cool completely.

 

Toss orzo with beans, tomatoes, onion, olives, mint and basil.  Add about 3/4 cup of the dressing to coat. Season with salt and pepper to taste.  Serve room temp. Save any leftover dressing to add to salad if it needs it.
