Nice change for grilled cheese.
1/2 cup Gorgonzola, crumbled at room temperature (2 oz)
3 T unsalted butter at room temperature, divided
8 slices crusty bread
1 large tomato cut into 4 slices
1/4 cup homemade or purchased basil pesto, divided
Combine Gorgonzola and 1 T butter and put aside
Spread remaining butter over 1 side of each of the bread slices. Spread gorgonzola mixture on unbuttered side of four slices and top with a tomato slice. Spread pesto on remaining unbuttered side of 4 slices. Top with buttered side up.
Heat a grill pan over medium heat. Grill sandwiches until golden on the bottom and cheese is heated through. Flip sandwiches and flatten with spatula and toast 1-2 minutes longer.
I found I needed a little more butter to spread on 8 slices of bread but that probably depends on the size of the bread. Enjoy!
