I am not a big fan of meatloaf but I love meatloaf sandwiches.  I have been trying different variations of meatloaf.  This is a saver.

 

2 T olive oil
1 large onion, chopped
1/2 cup diced red bell pepper
1/2 cup diced carrots
2 large cloves garlic, finely diced
4 oz coarse white bread (French or Italian) cut in 2 inch pieces (about 2-1/2 cups)
1 cup milk
1 pound ground beef
1 pound ground lamb
2 large eggs
1/4 cup cilantro, chopped
1/4 cup currants
2 t grated fresh ginger
1 T garam masala
1 T Worcestershire sauce
2 T honey

 

Heat 2 T oil in skillet over med-low heat.  Cook onion, bell pepper and carrot until softened (6-8 minutes).  Transfer to a large bowl and let cool.

In a shallow bowl soak bread in milk.  Lightly squeeze bread to remove some of the milk.  Finely chop and add to vegetable mixture.

Add beef, lamb and eggs to veg mixture.  Scatter cilantro, ginger, currants, garam masala and Worcestershire sauce over meat.  Gently mix all ingredients until just combined.  

Transfer the mixture to a baking pan and form into 10 x 4 inch rectangle or put in a loaf pan.  Spread honey over the top.  

Bake at 375 until 160 in middle (40-50 minutes).

 

Served this with ketchup heavily laced with Worcestershire sauce.  

If you like spicy food add a minced jalapeno pepper with the fresh ginger.  

 

Now I am off to make some meatloaf sandwiches!
