My favorite Christmas cookie...
ICE CREAM KOLACKY
BAKE FOR 15-20 MINUTES @ 350 degrees
2 dozen
INGREDIENTS
Pint Vanilla Ice Cream
1 pound butter
4 cups Flour
Fruit Filling
DIRECTIONS
Cream soften butter and ice cream together.
Blend in Flour
Pinch off small piece (size of quarter)
Place on ungreased cookie sheet
flatten middle of cookie with thumb
Fill spot with fruit filling
(I use Solo Cherry, Apple, Apricot, etc.)
I also make a cheese filling
CHEESE FILLING:
1 (8 oz.)cream cheese
1/4 c. sugar
3 tbsp. flour
1 egg yolk
1/2 tsp. grated lemon peel and 1 tbsp. lemon juice, optional
Softencream cheese, add sugar. Beat until light and fluffy. Stir in flour, egg yolk, lemon peel and lemon juice, 1 tbsp.filling per kolacky.
Cool and sprinkle with powder sugar
Do not over bake!

Sounds DELISH! Hope this doesn't sound too stupid...but do you just soften the icecream or is it completely melted when you mix it in?

@Chicagoan, Your recipe sounds delicious. I never heard of Ice Cream Kolacky before. I have made cream cheese kolacky. I am from Chicago too. ![]()

@Chicagoan I was thinking about this recipe the other day!
I saved 7 of 9's kolachky recipe and when I opened the saved file, the ice cream recipe was there, too!
A cookie baking weekend for sure here in Northern MI.

@Snowpuppy, I make these every Christmas season. So easy in the Kitchenaid stand mixer, years ago, I mixed with my hands and they would be frozen from the ice cream.

@lOVETOSHOP... Not a stupid question... Let the ice cream soften, not melted. I use a stand Mixer, Warning... if you mix by hand your hands will freeze, I did it that way for years until I got my Kitchenaid stand mixer. .

@lOVETOSHOP Your welcome, these are so simple to make and delicious. The Solo brand filling are perfect and you can buy all different flavors. The trick is not to over cook, these do not brown on top, they stay blonde. You will see a golden color on the bottom. I have a mini tart shaper from Pampered Chef that is rounded on the end that is great for making the well, otherwise, your thumb is a great tool. Let me know how you like them, they are so much easier than making the ones you have to roll out.
