I think it has something to do with my olfactory nerves because any strong floral scent effects me the same way. What substitutions would you recommend? I generally just substitute Oregano which I love but would be interested in other options.

You can try herbs like Marjoram or Savory for variety.(I love those in everyday cooking, much like Bay and oregano they add earthy depth). Perhaps try to find a spice/herb shop that you can sample first. Herbs and spices can be expensive to buy and not like.

Also, fresh is very different from dried.
I feel that way about oregano. Fresh oregano will knock you over.

Rosemary can be sort of pine-y and overwhelming.. I grow it in my herb garden and usually use just a small amount, minced very finely in recipes that call for it.
Cilantro is MY nemesis.. Tastes like soap to me..Here in Southern California, it is hard to find a meal without it!!!

Thyme is milder, but even that can be pungent. I'm not sure there is a flavor substitution for rosemary. I love all the culinary herbs! Except I do not have an affinity for cilantro for some reason. Even though I know it is really good for you! (As is rosemary, as is oregano, as is.....)

Every herb is different, has its own aroma, taste, use. Quite honestly I don't think you can substitute one for another as each substitute changes the whole complex of taste to any dish.

I used to hate dried rosemary. My problem was that I was using to much of it. I love to roast the baby white potatoes with olive oil and 3/4 tsp. of the dried rosemary.
