I'm making Kolacky cookies this weekend

I have a few types of cookies I usually make, but am going to cut back this year since we won't be visiting others.  I asked my hubby which were his favorite..... He comes back with  'can you make the ones that foldover and have jam inside'?  I showed him a pic of kolacky and that's what he's talking about!  I've never made them before, but they don't look too hard, just a bit time consuming.  I suggested that he could help Smiley LOL

Sounds good. Chocolate chip is about all I can handle.

@Knit-Chick, For a jam filled cookie I always made Thumbprints.

 

  The Kolacky cookie looks good.

 

Not to be confused with the pastry Kolache a jummy filled pastry.

@lulutoby yeah, I started to get confused when I was googling the recipe... I didn't know the exact spelling and was getting other ones popping up.  I like thumbprints, but haven't made those in years!

Kolacky!  Oh how wonderful!  IMHO, Thumbprints aren't even in the same category!  LOL

My mom used to make they every year. Sometime several times a year. So yummy. I wish I had her recipe.

@Knit-Chick  Sounds wonderful. My mother made those, mostly with apricot filling, and everyone devoured them.

I make those cookies a lot, even throughout the year.,,My DH loves them too.


I don't use jam to fill them.  I use Solo pastry filling, which is a product made for this.  It is delicious and less messy than jam or jelly.

@Carmie thank you,  I saw in one of the recipes a note about jam running out of the cookie.  I'm headed to the grocery store tonight and will look for solo pie filling.

@Knit-Chick   I think Solo makes pie filling, but be sure to get the cake and pastry filling.
