I would thaw the chicken first. Then marinade in the pickle juice for at least 2-3 hours. The longer you marinade the stronger the pickle flavor.

 

Add milk about a half cup of milk to the pickle juice 

 

Mix 2-3 eggs with milk.

 

Flour with a little powdered sugar.

 

Dip in the egg flour mixture browning on both sides

 

Transfer to oven for 30 minutes or until done.

 

I got this recipe from a copycat website for chick-fil-A

@depglass One of the men on the show "The Last Alaskans" (Heimo Korth) drinks pickle juice. He says to keeps him healthy. He is health conscious and also jogs on an oval path he made in the forest. You are not alone. If you like it, drink a little each day. Probably the entire jar would be a bit much for the system.

When my pickles are all gone, I will add two, or three boiled eggs to the jar. I only leave for 24 hours, or so, but they can be left longer for more intense flavor.

 

Flavored boiled eggs are yummy. I also do beet juice, tea stained and soy eggs. Tasty treats when watching calories.

My dear departed father used to drink pickle juice.  It didn't harm him.  He lived to be 92.

Isn't pickle juice high in sodium?  It's probably not the best thing for you, but you already know that.  Smiley Sad

Try it in chicken salad to taste.  Sweet pickle or bread and butter has a little clove, cinnamon, salt, and other spices that couldn't possibly be measured correctly for chicken salad.  Absolutely the most delicious home made chicken salad I ever had contained a little bit of pickle juice.  Our locally owned grocery store deli used to sell a chicken salad made by a girl who said it was her grandmother's recipe. Secret ingredient?  Pickle juice.

@BlueFinch  Pickled eggs and beets is one of my favorite picnic side dishes. Unfortunately, I'm in the minority, so I don't have them very often. Your suggestion's a good shortcut for me to get my pickled egg fix. I agree that if you leave them in the brine too long, they get tough. Thanks!

I use sweet pickle juice for pickled beets.  Just add a can (drained) of beets to the pickle jar, let set a day or 2.

 

I use dill pickle juice and slices to make baked chicken patties taste like Chik-fil-A!  

 

It's just vinegar with spices.  Not unhealthy at all.  Some bread & butter pickles have lots of sugar added.

You can also add flavor to cucumber slices, onion rings and sweet or hot peppers.
