I use an old Martha Stewart banana bread recipe that I've been making for 20+ years (I'm sure it's still on her site if you do a search for it.) Contains sour cream.
BUT, if I don't want to make banana bread, I simply peel and freeze in a Ziploc bag and then I can have what our family refers to as "Banana Whip." It's basically banana ice cream. I tend to use my food processor to whip these up, NOT my Vitamix. Just is easier for some reason. Sometimes I have to add a little water to think the mixture, but in general, it's just bananas! My kids and I like it with mini chocolate chips (would be delish with carob as well.)
