I have questions about keeping mashed potatoes warm in a crock pot......

I know I've seen you talking about this before, and to be truthful, I didn't pay much attention to what was written........big mistake! Hope someone will answer me on this.

I want to make my mashed about 8:30 a.m. and keep them in a crock pot until about maybe 1:30-2:00 or so. It will be a nice big batch. First: do I just mash them the normal way with butter, cream, etc.? Or can I dress it up with the addition of some cream cheese and sour cream? I can't bake them because I won't have the room in my oven.

Crock pots make their own steam inside. What does this do to the potatoes? Does it kinda water them down, or do you make the potatoes kind of thick or "stiff" like in the beginning? I assume they are kept on the low setting (??) and that it will keep the pots nice and warm all the way through. TIA for any help you can throw my way.....and/or tips!!
