I created a cute little snack...

I was a little bored and wanted a 'not too high calorie treat'.  I dug out my new box of mini vanilla wafers and vanilla ice cream and started creating a few options - see below:

 

I soaked the wafers briefly in Kahlua, dipped in cinnamon/sugar and put a generous dab of ice cream in between the wafers (like a mini ice cream sandwich).

 

I put a slice of banana between the wafers.

 

I put a dab of raspberry jam and then vanilla ice cream between the wafers.  

 

I'm sure you could add different things like rolling in sprinkles, peanut butter and banana, caramel/nuts/coconut.

 

I made 8 of them and hubby and I shared.  It was fun to have a 'bite of something' yet not eat a whole bowlful of calories Smiley Happy    I think grandkids would love it, too.  (I don't have those but hey, I'm still a kid)

@tarsmom Oh I am drooling! I like them all put especially the Kahlua and cinnamon sugar idea. What's your address? I'll be right over!

@tarsmom  Sounds delicious! I make little ice cream sandwiches with those thin ginger cookies. So good!
