@rms1954 don't be so hard on yourself. Have you ever bought a product such as a spice, only to find out you didn't need it? I have three nutmegs in my cabinet!

@ECBG   It's not because you are old.  It's because you have a hundred or more cookbooks, read magazines, see things on the internet and don't write it down, copy it or otherwise make any attempt to mark it because you are delusional and think you'll remember.

Since I find most recipes online, I send them to myself in an email so I have them handy after having lost them several times.

@Kachina624

Honey, make a folder on the computer and store them after copying from Word.

If I plan to try one, I will open it and save it to my "desktop."  Helps!

Is this it?  I do not know who posted it but I found it very interesting and eventually will be making it.  I printed it out and saved it.

Re: Cranberry orange bread made with canned cranberry sauce??

For the Cranberry Sauce Bread:
    • 2/3 cup sugar
    • 1/2 cup butter, room temperature
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 2 cups flour (9 ounces)
    • 2 1/2 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 3/4 teaspoon salt
    • 1/3 cup orange juice
    • 2 teaspoons grated orange peel
    • 1 cup whole cranberry sauce
    • 1/2 cup chopped pecans
For the Optional Glaze
  • 1 cup confectioners' sugar
  • 1/2 teaspoon grated orange zest
  • 1 1/2 to 2 tablespoons orange juice

Instructions:

  1. Heat the oven to 350 F. Grease and flour a 9-by-5-by-3-inch loaf pan.
  2. In a mixing bowl, beat the sugar and butter together until fluffy; add the egg and vanilla and continue to beat until well blended
  3. Combine flour, baking powder, and salt; add to creamed mixture along with the orange juice and zest; stir until thoroughly blended. Stir in cranberry sauce and chopped pecans.
  4. Turn the batter into the prepared loaf pan.
  5. Bake in the preheated oven for about 55 minutes, or until a wooden pick inserted into the center of the loaf comes out clean.
  6. Cool the bread on a rack and then remove from the pan.
  7. Meanwhile, in a small bowl, combine the confectioners' sugar, orange zest, and enough orange juice to make a thin icing.
  8. Drizzle the icing over the cooled bread and slice with a serrated knife. Enjoy!
