This makes a 3-layer cake

Hummingbird Cake

3 cups all purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 cups sugar

1 teaspoon cinnamon

3 eggs...beaten

1 1/2 cups vegetable oil

1 1/2 teaspoons vanilla extract

1 8 ounce can crushed pineapple..UNdrained

1 cup chopped pecans

2 cups mashed bananas

frosting...recipe below

Combine first 5 ingredients in a large bowl. Add eggs and oil stirring til just moistened. DO NOT BEAT. Stir in vanilla, pineapple, pecans and bananas. Pour batter into 3 greased and floured 9 inch round cake pans. Bake at 350* for 30-35 minutes or til toothpick inserted in center comes out clean. Cool for 10 minutes then remove from pans, completely cool on wire racks. Spread frosting on top and sides of cake.

Frosting

1 8 ounce package cream cheese...softened

1/3 cup butter...softened

1 16 ounce box powdered sugar...sifted

2 teaspoons vanilla extract

1 cup chopped pecans

Combine cream cheese and butter. Beat til smooth. Add powdered sugar and vanilla. Beat til light and fluffy. Stir in pecans. Frost COOL cakes.
