That used to drive me crazy! I'd make a macaroni or potato salad that looked beautiful, but after sitting in the frig overnight would look dry and unappetizing.

 

I discovered the solution is to hold back part of the dressing and add it to the salad just before serving. (Or make a little extra dressing for that purpose.)
