@Katcat1- I've seen recipes call for melted butter. Alton Brown- Good Eats on the Food Channel has a recipe.

I use shortening instead of butter ,also increase the amt. of brown sugar and decrease the white sugar. The point is to create more moisture.

Using 1/2 cup butter and 1/4 cup full fat cream cheese. Increase flour by 1/4 cup.

Look at the sugar ratio. More brown sugar in the recipe vs all white/granulated sugar makes for a chewier cookie.
If the recipe uses say 1c sugars total, I use 3/4c brown sugar 1/4 c granulated sugar. Dark brown sugar has more molases than light brown sugar.
Also substituting shortening for some of the butter. I don't use margerine in cookies. Personal choice.

Adding a little honey will give you a soft cookie. If your cookies are too crisp for your liking, store them in an air tight container with a piece of apple added. This will soften them up.

I just take them out earlier. The longer you cook gives more crisp.
