I do make bread occasionally, though I haven't in a while. I make really great cinnamon rolls, honey wheat bread, whole wheat bread but I want to make a nice crusty bread. If anyone here is from Buffalo, NY and has shopped at Tops or Wegmans, they have a bread there called Vienna bread, some people call it Italian bread too and it is the bread that is served at a lot of Italian restaurants in the Buffalo area. It comes just sliced on a plate with butter. It is a white bread that is soft in the middle but really nice and crusty on the outside.
Is the trick to crusty bread letting it rise more times and then punching it down and kneading it more and then letting it rise again.
If anyone has any recipes or advice on how to make this, I would appreciate it.
