I have a recipe that calls for 1 cup of scalded raisins.

 

1) How do I scald raisins?

 

2) How do I know when they're scalded?

Pour boiling water over them.

Just looked on line and scalding raisins is the same as plumping them. Take a cup of hot water put raisins in for about 5 minutes and drain

What are you making?

 

 

Measure your raisins, pour into a heat safe bowl, pour approx 2-3 cups of boiling water over the raisins.  Let sit 5-10 minutes.  Drain thoroughly.  I would also take a paper towel and gently dab up the water remaining on the raisins.   Taste one before and after, you'll notice the difference.

I looked it up and just as the others said, it is to pour boiling water over them and let them sit to plump them up.  I have a ham sauce recipe that uses raisins soaked in rum to plump them up.  Now that was tasty!

Most of the recipes I have for scalded raisens are cookies and you use the liquid that you drain off the raisens.
