Years ago a friend sent me a picture of "the dream guy" - it was extremely handsome buff men doing things like vacuuming and taking the trash out.  The things we really need!

I made a vegetable pot pie that turned out delicious.  I made the filling from scratch, but used puff pastry for the crust to save time.  My mother in law, who doesn't usually enjoy vegan food, ate most of it.  I will definitely make it again.

Our dinner was pretty traditional, no new recipes. I made keto and regular options so everyone could have a nice meal they enjoyed.  I assembled our cheesy broccoli & cauliflower casserole on Saturday.  I thought I took it out of the fridge in plenty of time to come to room temp before heating.  It was still cool when I pulled it from the oven so I had to finish it in the microwave.  It was fine.  I learned to not bother with sweet potatoes anymore.  Only my DDIL took a little and she gave a little to our DGD.

My Corky's ham was a big hit. It's been in the freezer since Christmas. 

What was even a bigger hit was my Navy Bean Soup which was made with the left overs.

 

Tomorrow, I will use what's left of that ham, cube it small and use it in my Arroz con Gandules.  It always elevates the flavor of the rice.

Everything turned out very good and pleasant time with all my family.   They requested my usual Italian dinner,  sometimes lasagna, or homemade manicotti.  I switch it up with either chicken or veal parm, and a pasta side.

Last year I made a recipe I saw that guy Jeff from the "Kitchen" make.  It was stuffed shells with Ricotta, mushrooms and spinach in a vodka sauce.   That was a hit.   So this Easter, the kids asked for baked ziti( easy peasy for me)   Everything in the sauce,  meatballs, sausage,  pepperoni, hard boiled eggs.  Garlic bread.

One daughter brought an extravagant antipasto,  and  another daughter made a ham.  I also made some breaded fried artichokes hearts.   Dessert was a rich chocolate cake, and cupcakes.  Lotta red wine🍷🍷🍷🍷
