How did your Easter dinner turn out? New recipes work?

I think..... my new recipe turned out ok----made  a salmon wellington using the faroe island salmon I bought at the Q. It looked beautiful ---I used puff pastry to wrap it over spinach and cream cheese with asst herbs, on top of the fish. But the pastry was a little under -cooked on the bottom so maybe just a few more minutes cooking would have done it. Had my tried and true pressure cooker risotto, fresh asparagus and fresh strawberries. and tried a new recipe for a hot milk cake that was really good too. Think I will slice the rest of the wellington and re heat in the airfryer for dinner tonight. One thing I will say is, that salmon had absolutely no fishy odor when cooking----really great !!!

 

So how were your new recipes?

I made a recipe for an asparagus tart from the NYT.  It was fine, but it would have been better with tomatoes instead of asparagus.

I made my traditional leg of lamb with roasted potatoes in the juice of the meat, a baked ham, scalloped potatoes, corn, asparagus, a green salad, homemade bread and rolls, chocolate covered strawberries, rice pudding, a chocolate cake with coconut frosting, and cheesecake.

 

Two of my guests brought appetizers and one brought a cake.

 

There was ham, desserts and appetizers left, but mostly everything else was gone.

 

We had a great time and everyone had a full tummy.  Everything turned out great.

 

The only new recipe I tried was for the chocolate cake.  I had some buttermilk I needed to use up, so I looked for a recipe to use it.

 

 Everyone said the cake was delicious.  It was easy to make and I didn't even need to use my mixer and no sifting flour.  Really easy.

 

@wagirl That salmon sounds delicious.  I love salmon, most of my guests do not.

Just the two of us but I made a tortiere (french pork pie). It was delicious. Along with squash, asparagus and sweet pickles. I froze some otherwise dries out.

We had ham, which is reliably good, but I did make Trisha Yearwood's sour cream and bacon deviled eggs. I was unimpressed. Next year I'll go back to what I know as traditional deviled eggs.

 

My cherry cheesecake was the highlight of the day, and I'm glad it was because the first one I baked turned out pretty awful and I had to bake a second one.

Well, the .84 pack of peeps was a big hit!  I surprised DH with those.

 

Then I baked a Wegmans prepared frozen pasta cassarole, added extra chicken and brocc, and some mozz and parsely, and it worked out nicely.  Pretty tasty.  Turned up the oven and browned it at the end.

 

The devilled eggs were up to my usual standard.  Mash and mash and mash and then add mayo and yellow mustard, dash of salt and top with paprika.

 

That salmon wellington, @wagirl .  That is ambitious!

Mine turned out fine, but then again hard to mess up soup and a sandwich.

everything was delicious!

 

we had cheeses, veggie dip, and guacamole for appetizers, along with wine and cocktails and mocktails.

 

my daughter and son in law made filets on the grill AND a spiral sliced ham with a wonderful jus. cheesy hash brown casserole, salad, sauteed garlic green beans, brussel sprouts, honey wheat bread that i made from the company soberdough, yogurt with cucumbers/dill/mint

 

something he did do differently this year. he seared/grilled the ham on all sides for just a bit on the grill before they got it into the crockpot. it was so yummy.....lots of flavor and crispy on the outside.

 

my daughters mother in law brought a very delicious lamb cake and a lemon meringue pie.

 

STUFFED!!!!!!!

 

next up.....i got some ham to go and they gave me the hambone to make a ham and bean soup. Smiley Happy

I had cooked a beef stew the day before Easter.  The BF wanted air fried chicken wings and I had leftover vegetables from beef stew.  Delicious!
