Bake bananas on cookie sheet at 350° for 20 mins to ripen for baking. They come right out of the peel plus mash up easier. 

I have ripened bananas on the counter right now. DH thinks I should throw them in the trash??? 

Guess I need to make more banana bread or muffins.

Good tip but too much work for me.

I just peel & mash no matter ripe or not

@Mz iMac   We do too - DH in his lunch, me with peanut butter and our dog. Wallace loves them too.

Willoughby, an Old English Sheepdog.  We pass a chocolate standard on our walk most days.  VERY obedient and so cute.

I'm lucky, I like very ripe bananas.  That means I get to buy the ones that are marked down to about half price.  Brown skins look terrible but the fruit inside has much better flavor.  Tops for baking.
