This turned out great! It was so moist and delicious. I used a 4.5 pound organic Rosie's whole chicken I got at Sprouts. I did add some ground pepper to the spice mix in addition to 1 T. of EVOO and 1 T. of red palm oil. The oil made it a paste which I find a little easier to rub over the chicken. I placed the chicken on top of a large Walla Walla onion I had sliced in about 3/4 inch pieces and put in the bottom of my Ninja. I cooked it for 4 1/2 hours on high. It was so tender that it fell apart when I took it out of the pot. It was also a big hit with my husband which was nice.
Thanks, snicks, for posting this. It's now my new favorite way to cook a chicken in my slow cooker.

I like this method when I need cooked chicken meat for another recipe, like quesadillas. The meat is extremely moist this way and holds up to reheating.
