 Hot Three Bean Casserole

 

2 Tbs. olive oil

1 cup coarsely chopped onion

1 cup chopped celery

2 cloves garlic, minced

1 can (15 oz.) chickpeas, rinsed & drained

1 can (15 oz.) kindney beans, rinsed & drained

1 cup coarsely chopped tomato

1 cup water

1 can (8 oz.) tomato sauce

1-2 japapeno peppers, minced

1 Tbs. chili powder

2 tsp. sugar

1 1/2 tsp. cumin

1 tsp. salt

1 tsp. dried oregano

1/4 tsp. black pepper 2 1/2 cups (10 oz. bag) green beans

 

Heat oil in large nonstick skillet over medium heat. Add onion, celery, and garlic; cook & stir for about five minutes, until tender.

 

Add all other ingredients except green beans; mix well. Bring to boil, reduce heat to low, and simmer, uncovered, for 20 minutes.  (You'll probably have to add a little more water.)

 

Add green beans, simmer for about 10 minutes until tender.
