This is for all of the baked or grilled pork we do.  Really good.  Source:  Betty Crocker 1970 cookbook.

 

Mix equal amounts of sage, marjoram, garlic, and salt.  Rub all over roast.

Rather than inundate you with more recipes (there are so many really good ones here and online) I will give you my best advice on cooking a roast ~ low and slow.

I’d season it with whatever spices / seasonings you have that you like for pork and cook about 4 hours in the crockpot or oven , until tender , you could even wrap the roast in foil in the crockpot to hold in moisture
Or you could cut into medallions and cook like small pork
chops seasoning as you like , maybe with a gravy

Btw those bbq recipes sound really good

I do not brown this roast since the pork comes out so tender that we just shred it.  I use enough Dr Pepper to completely cover the roast, which is 3-4 cans if I'm cooking 6-7 lbs of pork.

One other thing Since it’s a very small pork roast it’ll cook fast unlike the one pictured above if you roast it without cover you’ll need to pay close attention to keep it from being like leather

@RedTop  @Sooner  I just discovered that Stubbs makes a Dr. Pepper BBQ sauce. I got it from Amazon. Oh Lordy!! Is it delicious. I made it with country ribs, that's what we call them here. First covered in the oven without the sauce and then 20 mins-ish with the sauce uncovered. I imagine crockpot style works too. That's my next trick to make it. lol

 

Hubs and I love Dr. Pepper. It was so cool that I found this sauce. Try it if you can.Woman Happy

As much as I love sauerkraut if I were adding sliced or diced apples I would use red cabbage. 


I also like to marinade in teriyaki sauce and cook with pineapple.

You might consider cutting the pork into medallions and pounding them down to make schnitzel.
