Homemade, bulk baking mix (without the fat added)

I keep this on hand for biscuits, pancakes, waffles, muffins, etc. and add the fat (crisco, butter, whatever is best for the recipe I'm making) when I use it. Much, much cheaper in the long run over bisquick, krusteaz, etc and I can control both the salt and the sugar.

Bulk Baking Mix. Makes enough to fill tall Lock and Lock (4.2 L, about 4" x 4" square)

12 C flour
3 Tablespoons sugar or sugar substitute
6 Tablespoons baking powder
4 1/2 teaspoons baking soda
3 teaspoons salt (or less if you wish)
2 1/4 C buttermilk dry mix.

I put all the dry ingredients through a sieve when I first add them to the bowl and then mix it all with a wire whisk. Store in airtight container.
