Homemade Peanut Butter Cups

I found this recipe in America's Test Kitchen Kids Cookbook.  Since I own only 1 mini-muffin tin, I make these in 2 batches:

 

12 oz milk chocolate ( I use 3 of the 4.4 oz Lindt bars)

1/2 cup peanut butter (I like creamy)

3 tbsp powdered sugar

1 tbsp butter, cut into quarters

Dash of salt

 

Line muffin tin with paper liners.

 

Put chocolate in gallon Ziploc bag and squeeze out air before sealing.  Beat with meat pounder into small pieces.

 

Put 1/2 of chocolate pieces in bowl and melt at 50% power in microwave for 1 minute.  Stir and melt at 50% for 1 more minute.  Stir until smooth.

Pour into 1-quart Ziploc bag.  Push to a bottom corner of bag and twist the top. 

Snip 1/8" size opening at corner.

Pipe into each muffin tin cup to cover bottom.  Chill in freezer for 15 minutes.

 

Heat peanut butter in bowl at full power for 1 minute.  Stir in powdered sugar, butter, and salt.  Pour into 1-quart Ziploc bag and snip 1/8" size opening at corner.

Pipe onto chilled chocolate to cover.

 

Melt rest of chocolate pieces in same way as first step.  Pipe to cover peanut butter.

Chill in freezer for 1/2 hour.  They store well in refrigerator.

I  wonder if dark chocolate would also work ?  I've had dark choc. peanut butter cups and they were even better than milk choc.

@Alsace Gal The cups of the mini-muffin tin are lined with paper liners.  I've never had a problem with the liners releasing from the tin.  If you have a problem with the liners sticking, you could spray the tin with PAM.

@deepwaterdotter I'm probably going to make your recipe today. Can you tell me how many PB cups (approx.) this recipe makes? I'm going to my brother's house for lunch tomorrow and want to take something.

We used to roll the peanut butter mixture and drop in melted chocolate with a little paraffin.

24 if made in mini-muffin tin, 12 if made in full-size tin.
