Homemade Italian Dressing Recipe...

 

Hi Everyone...

 

I'm looking for a good homemade Italian Dressing Recipe for a Pasta Salad...I would appreciate you sharing your recipes.

1/3 cup olive oil

1/4 cup red wine vinegar

2 tbsp grated Parmesan

1 tsp sugar

1 tsp minced garlic

1/2 tsp kosher salt

1/4 tsp dried oregano

1/4 tsp dried basil

1/4 tsp dried parsley

Super Simple: Oil (your choice), Vinegar, and Oregano to taste.  Salt and pepper if you like.

 

Tasty, easy, clean dressing without a lot of flavors competing with each other.

@MyShadowLove  The recipe that @deepwaterdotter provided looks perfect I'm going to save that.

 

Rarely do I use processed foods as I cook however in a pinch I'll use "Suddenly Salad" General Mills and serve either hot or cold.

 

Part of it is nostalgia, my parents would use this periodically and they rarely bought packaged foods.  As a kid I loved it.

Thank you so much for your replies!...I just got done making my Pasta Salad and used @deepwaterdotter 's dressing recipe...with a little bit of taste adjustments here and there...I also prefer a homemade over bottled dressings and like to keep meals as healthy as possible....I love vegetables so I really added a good amount and had to break it up in order to be able to toss it properly...Here's my Pasta Salad...

 

Tri-Color Pasta

Spinach

Cherry Tomatoes

Medium Zucchini

Red Onion

Cheese of choice

 

I tossed the Pasta with about 1/2 of the salad dressing...then added the vegetables...and tossed again with the remaining dressing...I did have to make a little more of the dressing because of all the vegetables that I added...I will also admit that I added a few shakes of "McCormick's Perfect Pinch Salad Supreme" to top it off...just to hype it up a little more.

 

I'm full just from making it and I only did a few small taste samples along the way but sometimes I just get full from making any kind of a meal...just from looking at it...I tend to be a light eater and just "graze"  throughout the day.

@deepwaterdotter Just what we make except I use more vinegar to oil, skipthe sugar and Parm cheese, and often add a little Dijon (with seeds or without) mustard and maybe a touch of honey with the mustard.

 

But thanks for the recipe and that stuff is so good.  Also, like Banyuls Vinega (Amazon)which I can use on salad with nothing else.

@Sooner...Yes, I usually end up doing the same with most recipes and make adjustments along the way according to our personal tastes.

 

Interesting that you mentioned adding a little Dijon...I will give that a try next time.

Your completed pasta salad sounds delicious @MyShadowLove!

 

My now 26 year old son's favorite meal that I have been making since he was little is tri-color pasta, sauteed broccoli, tomatoes and onions with a bit of cajun seasoning in a chicken broth base.

@rockygems123 ...I definitely made note of this and will give it a try...sounds very good and a recipe that we would enjoy.

 

One of my very favorite recipes is with Tortellini, Spinach and Tomatoes.

 

8 oz. Tortellini

1 tblsp. olive oil

1 28 oz can of unsalted diced tomatoes

1 package of baby spinach

2 garlic cloves...minced

fresh cracked pepper

1/4 cup vegetable stock

1 tsp crushed red chili pepper flakes

grated parmean cheese

 

Cook tortellini, drain and set aside...

 

Heat olive oil over medium heat...add tomatoes, pepper and red chili pepper...simmer 3-4 minutes while stirring...

 

Add garlic, vegetable stock and spinach to skillet...cook on medium 2 minutes...add cooked tortellini and stir all ingredients together....Remove from heat.

 

When serving, sprinkle with parmesan cheese.

 

I think we have now had our fill of pasta for the day...lol
