I make a dressing using balsamic vinegar, Dijon mustard and maple syrup.  Start by using 2 T of each then you can adjust it to your taste.  It makes a very strong dressing so use very little.  It is good on a salad with baby greens, avocado, dried cherries or cranberries with toasted slivered almonds sprinkled on top. It is also good drizzled over sliced tomatoes, etc.

To replace the oil try:

- white beans

or

- a steamed/boiled gold potato

Adds creaminess w/ no additional taste or oil.

Sounds crazy, but it really works.

HTH!

Another option:

If you Goggle, ‘Simple Daily Recipes Fat Free Dressings’,

Jill McKeever uses a cooked cornstarch to add that ‘depth’

an oil dressing has.  https://youtu.be/d3GJiU2pLrk

Take care when cutting out too much fat from your food plan as your hair and skin can dry out severely. Once that skin collapses and wrinkles there is no going back.

No worries about that, Incorporate Pecans and other organic nuts proper portions along with flax seed and chia seeds. By the way since becoming Vegan loosing 60 plus pounds skin and hair has never ever looked better clarity and tone. Attribute 100% to plant based lifestyle along with exercise and yoga.

@Sweet_Serenity can you use any nut oils? Without oil, I just love red wine vinegar with  a little salt, pepper and mustard. Lemon is also a good substitute for vinegar.

Olive oil is healthy, so I use it regularly, but in moderation due to its calorie count.
