@Carmie   Those look wonderful!  I make a similar cookie but use anise extract.  It's not Christmas without our Italian cookies!

I usually make sugar cut out cookies, oatmeal scotchie bats, shortbread and rise krispie bars frosted with chocolate/peanut butter frosting.

This is the recipe from a local Savannah bakery for 'Chocolate Chewies', they're like a cross between a cookie and a brownie!

 

12 oz. powdered sugar

1 - 1/4 oz. cocoa powder

3 egg whites

2 tablespoons all purpose flour

8 oz. chopped pecans
 
Preheat oven to 350.

Line cookie sheets w/parchment paper

Place sugar, cocoa & flour in mixing bowl and beat till well blended. Beat in egg whites, one at a time, scraping bowl as necessary.

Beat at high speed 1 minute. Beat in pecans.
 
Drop by tablespoonfuls onto cookie sheets, leaving 2 inches between cookies for spreading.

Bake one sheet at a time for 15 minutes, turning sheet halfway thru baking time.

Remove from oven, cool on paper.

Place cookies on paper in freezer; freeze 1 hour.

Remove from freezer; peel paper off cookies.

Store in airtight container.

These do not store for very long.

Makes about 2 dozen.
You never know how strong you are until being strong is the only choice you have.

I am Italian, but I HATE Anise.  I never use it in my baking, though the rest of my family does.

 

I do eat Homemeade sausage with anise seed in it, but my DH doesn't like the seeds. He isn't Italian.  We have to make a special batch just for him.

There cookies are one of my favorites. I think chilling the dough & shorter baking times

Helps to keep cookies moist.

 

Peanut Butter Kiss Cookies

 

2 cups Bisquick baking mix

3/4 to 1 cup peanut butter 

1 LG. egg

1 tsp. vanilla extract

14 ounce can sweetened condensed milk

1 bag Hershey's chocolate kiss candies

 

Mix all ingredients together except choc. candies. Chill dough for at least  1 hour. Preheat  oven to 350. Shape into 1- inch balls & place 2- inches apart on cookie

Sheet. Bake 6 to 8 minutes or until lightly browned. (Do not over bake)

Immediately after taking out of oven, press a kiss candy in the center of each

cookie. Put cookies on cooling rack to cool completely. Store in airtight container.

Chocolate Fruit And Nut Clusters

 

1/2 Cup whole almonds

1 Cup Semi Sweet chocolate chips

1/2 Cup raisins

 

Preheat oven to 350*

In a baking pan, toast the almonds for about 12 minutes.

Stir a couple of times.

When almonds are toasted, put them in a bowl while they are still hot.

Add chocolate chips and stir till chocolate is melted (the heat from the almonds will melt the chocolate).

Stir in the raisins.

Drop the mixture by Tablespoons onto a cookie sheet that is lined with wax paper.

Chill for about 30 minutes, or until they are hardened.

 

This makes about 12 clusters.

A yummy bar cookie with pecans!  What's not to love!

 

 

Butterscotch Bars

 

Preheat oven to 325 degrees

Line a 9 x 13 inch casserole with aluminum foil which should go past the ends about 8 inches.  The extra will be handles to lift the cooled block of cookies to cut.

Grease or spray pan and aluminum extremely well.

4 Eggs

     1  (16 oz) box light brown sugar

2    Cups Bisquick

2    Cups chopped pecans or walnut

 1     6 oz  pkg. butterscotch morsels

1 teaspoon vanilla

 

 

Beat eggs with hand mixture until frothy.

Gradually beat in sugar until thick.

Stir in vanilla, biscuit mix, chopped nuts, and butterscotch morsels.

 

Spread into greased  9 x 13 in. pan.

 

Bake at 325 for 45 minutes.

 

Cool and cut.  Yield two dozen.
