I am making a strawberry pie and cannot find my recipe for the crust I use.  I am sure it was butter, flour and powdered sugar, so I searched the recipe forums for the recipe...which I found here but I cannot find anything except the recipe below.

BELOW is what I found but the 1 cup butter and 1 stick butter...makes no sense, maybe there is an error and it should read 1 cup flour?  Can anyone help me out?  I think it was called a cookie crust....THANKS!

I think these ingredients are not correct but it is what I found when searching the forums.

CRUST~
1 cup butter
1 stick butter
1/4 cup powder sugar

@Mom2Dogs- I've never made this but there are lots of recipes out there for cookie pie crust.

The ingredients you list wouldn't work because there's nothing to bind the butter and sugar together.  Most call for crushed graham crackers or cookies (hence the name).

I hope someone can find the original recipe for you.  (Strawberry pie...yum!)

@Venezia  Before asking here I looked on line, I cound not find anything close to what I used.....the recipe I used was to combine the ingredients and pat into the pan, no rolling, then bake.   Grrr so irritating when I cannot find a recipe.

@Mom2Dogs- I'm sorry I couldn't help.  I had just googled it before I replied and that's how I came up with pages of recipes.  All I put in the search bar was "cookie pie crust".

The few I looked at were all no-bake versions.

Again, sorry, but maybe someone else can help.  Smiley Sad

Re: Help with pie crust

[ Edited ]

Found this online at Add a Pinch site. Same recipe on All Recipes but it also uses 1/4 t baking powder.

Shortbread Crust makes a delicious addition to so many desserts. Made of three ingredients, this simple shortbread crust is easy works for pies, cheesecakes, tarts, and so many other desserts.

  • 1 cup 2 sticks salted butter, softened
  • 2 cups all-purpose flour
  • ½ cup confectioner’s sugar
  1. Preheat oven to 350º F.
  2. Mix together butter, flour, and confectioner’s sugar. Press into the bottom of a 9×13-inch baking pan, a pie plate, tart pan, or other pan for your baking.
  3. Bake for approximately 12-15 minutes, or until lightly golden brown.
  4. Remove from oven and allow to cool completely before filling.

@Mom2Dogs

Found another one that does use 1 cup of flour using their microwave.

VERY EASY, quick, pie crust that you "press" in a pie plate. Especially good with chocolate, strawberry, plain lemon, or lemon ice box filling. If you are in a big hurry, this is it!!

1 stick butter

1 c flour

1/4 c powdered sugar

  • Melt butter in microwave in medium size bowl
  • Mix flour and powdered sugar in a bowl, whisk to blend
  • Add to melted butter, mix well
  • Press into pie plate
  • Bake in a 325 degree oven until light brown, watching closely
  • Fill with favorite pie filling
  • NOTE: It browns quickly. Light brown is best. ENJOY!

@Mom2Dogs

Looks like the recipe with 1 c flour fits in a pie pan & the recipe with 2 c flour will work for a 9 x 13.

@momtodog, hope this helps:

@Yahooeyposted a Martha Stewart recipe on my slabpie thread - it's not a cookie crust, but it's MS'a recipe so it should be tasty!
