I've never really read the posts in this Cookie Exchange forum before, but was hoping for some help with oatmeal cookies.

I am a really good cookies baker, and have a long list of ones that come out beautiful enough for selling or using in photos. I have yet, though, to master the art of the oatmeal cookie. I like a cookie to look as good as it tastes, and every recipe I've tried for oatmeal just spreads out very thin. I have had really good bakery oatmeal cookies that are thick and wonderful, but I can't seem to get there. I'm guessing that bakeries my be using something as a thickener.

I have tried several things like chilling the dough, and sheets first, using shortening instead of butter, as butter will cause cookies to spread, but even though I've found some great tasting recipes, they all spread so flat, and really don't look like I want to present them. Is this just the nature of oatmeal cookies? Can anyone offer any other suggestions or recipes that don't spread out paper thin when baked? Has anyone had luck replacing the soda with powder to get lift? Thanks for your help!
