Re: Help please, hubby says rice is boring.

Best rice pilaf in the world.  Won't try another.  Always get requests for recipe

1 cup uncle bens rice (not instant)

2 cups chicken broth

1/2 stick butter or margine

1/4 cup water

1/4 broken pasta (I use angel hair)

In pot - melt butter and add 1/4 cup broken pasta - brown (be careful not to burn)

add 1 cup rice and 2 cups chicken broth and 1/4 cup water

bring to boil

add lid and simmer for about 18 minutes

take lid off, stir and continue cooking if necessary

Enjoy

@SoldierWife  Made your rice pilaf last night and, you are right, it is the best!

Tonight, I cubed chicken thighs (1/2"), browned in butter and added it to the left over pilaf.

Enjoyed the absolute best, "definitely not Southern," chicken and rice on the planet!  Both are a keeper.  Thanks for the recipe!

I use mostly diced cauliflower now except when making a particular casserole DH likes that must have the rice.
I also like to make citrus rice to go with salmon...add orange juice and orange zest , or lime juice and lime zest.

Re: Help please, hubby says rice is boring.

We like rice served with tomato gravy or just canned diced tomatoes warmed with whatever herbs you want.  Top rice with the tomatoes.  Or we love yellow rice/saffron rice.  you can get the Yellow Rice mix at the store and cook basically the same as regular rice.  Yum!  We also do chicken and rice with yellow rice instead of white rice.  Yum too!

There's always potatoes, pasta? Both dishes can be prepared in many different ways.

Sounds SO GOOD but a 1/4 cup broken pasta sure doesn't seem like much. ???

I feel guilty about starting this thread, because you took the time to post excellent ideas.

There are so many things he can't eat, or won't eat.  I know the inclination would be to say, "Well, then he can not eat", but he has health issues and he eats very little, so I try to cook things that will entice him. One of the things he's most likely to eat is cheese, so while I try to cook lighter meals, I think I'll have to get cheesy, maybe with Parmesan or cheddar.  Pesto was a great idea, as well, he likes pesto.

Risotto in a PCooker is THE easiest Ever!  Delicious and lots of great cheesy or not recipes out there!!!  Worth getting a PC just to cook that.  You set it and forget it!  wonderful!
