QUINOA, RICE OR COUSCOUS SALAD WITH ALMONDS & DATES

 Serves: 4-5 cups     This is good with golden raisins, chopped dates or figs (of a combination of as well as apricots.).  I have only made it with quinoa

 

INGREDIENTS

Salad

  • ½ cup uncooked  rice, quinoa, or couscous)
  • 1 bunch flat leaf parsley
  • ½ cup sliced almonds
  • 10 dried apricots (about ½ cup)

Dressing

  • 2 TBS olive oil
  • 2 TBS vegetable or canola oil
  • 2 TBS apple cider vinegar
  • 1 clove garlic, minced
  • ½ TBS Dijon mustard
  • ½ tsp sugar
  • ½ tsp dried basil
  • ½ tsp salt + freshly cracked pepper to taste

INSTRUCTIONS

  1. Cook rice/quinoa or couscous per directions.
  2. While it is cooking, make the dressing so the flavors have time to meld.
  3. Mince a clove of garlic and combine it in a bowl with the olive oil, vegetable oil, vinegar, Dijon, sugar, basil, salt, and some freshly cracked pepper. Whisk the mixture with a fork (or whisk) until combined. Set aside.
  4. Rinse the parsley well with cool water and shake off as much water as possible. Use a salad spinner or pat with a paper towel to remove excess moisture. Pull the leaves from the stems and then give them a rough chop. Place the chopped parsley in a large bowl.
  5. Roughly chop the dried apricots into small pieces. Add the chopped apricots and sliced almonds to the bowl with the parsley.
  6.  Finally, add the cooked and cooled starch.
  7. Pour half of the dressing over top of the salad ingredients and toss until everything is well mixed and coated with dressing. Add more dressing if desired (I used about ¾ of the total dressing recipe).

This is one of my favs!  I think DiAnne posted it maybe.

 

 

CALYPSO RICE

Good with barbecued meat, chicken or fish!

 

1-1/2 cups chicken broth
1/2 cup pineapple juice
1 cup rice
1 med onion, chopped
1/2 red bell pepper, chopped
1/2 orange bell pepper, chopped
1/2 t turmeric (leave out or sub curry or dry mustard)
1/2 t salt
1/8 t black pepper
1/4 cup chopped parsley

 

In a med saucepan bring broth and juice to a boil over high heat.

Stir in remaining ingredients except parsley.

Reduce heat to low and cook covered to about 20 minutes.

Remove from heat and let stand covered for 5 minutes or until all liquid is absorbed.

Toss rice with fork and sprinkle with fresh parsley.

I had a bean and cheddar wrap and was thinking earlier that I wish I had

some rice to go with it.

 

Love spanish, garlic, and broccoli rice. Sometimes I add peas to it.

 

So good that I just eat it as my main meal some days.

You husband is right, plain rice is boring and tasteless.

I bbq pork last night (or sub chicken) chopped into my basmati rice (I also like jasmine) Add frozen thawed carrots and peas. Add a little terryaki sauce (I like yoshidas).
Spanish rice with onions, tomatoes and cumin.
Cold rice dishes with cranberries and nuts are also great.

@house_cat  Nuts can be added and orzo, in addition to herbs.  I use fresh herbs, garlic and/or or green onions mixed with a bit of extra virgin olive oil and mix it in before serving.

 

Google for recipes, there are tons.

Goya also has several different kinds of rice. I sometimes use the yellow one and add some sauteed onions and peas or olives to go with a Spanish or Mexican theme 🌮🌯 or plain or Mexicorn to it. I also sometimes make a quick Arroz con Pollo(chicken and rice) by adding sauteed onions, sauteed cubed chicken , olives and pimentos when I want a quick one pot meal. We usually have a salad, avocado and sometimes black or red beans with Sazon and sofrito in them! 🥑😋
