@house_cat, DH doesn't like rice either, except my saffron rice. Even if you don't have saffron, you can still make a good dish.
Here is my recipe (sort of):
butter
onion
1 C rice
2 C chicken stock
salt
I use about 2 or 3 T of unsalted butter, melted in a large pan and then saute all or part of a small onion. Add the rice to the sauteeing onion to toast it. Then, add salt and saffron. Reduce heat, cover,and cook for about 20 minutes. Let sit for 5 minutes.
As you can see, you don't need saffron, but you could use some other types of seasonings or nothing extra.

Boring means there is a lack of initiative. Gently suggest he look on the internet at the thousands of ways rice can be made and you will be happy to make it for him. You are being very kind to accomodate him. (dairy is a major health concern, so you might not want to consider cheese as an option)

Here is another idea. Cook your rice. In a separate pan saute some chopped onion in olive oil/ butter. Then add some frozen mixed vegetables to the pan and continue to saute. Then add desired amount of rice to the vegetables and continue to simmer. Add more butter if needed. At the end of cooking add grated parmesan cheese. The heat will start to melt it.

I have never tried them but I have noticed several frozen rice items in Trader Joe's - fried rice, mushroom risotto, etc. That might help you out.

Do you remember the poster @Beebee2? A long time ago, she posted the below recipe which sounded good to me. I haven't made it, but one day, I will!
Stephenson’s Apple Farm Green Rice
3 c cooked rice
1 c chopped parsley
1/2 c grated cheddar cheese
1/2 c chopped onion
1/4 c chopped green pepper
1 clove garlic, minced
14-1/2-oz can evaporated milk
2 eggs, beaten
1/2 c vegetable oil
1 T salt
1/2 t each seasoned salt, pepper
1/4 t Ac’cent, monosodium glutamate
Juice and grated rind of one lemon
Mix rice, parsley, cheese, onion, green pepper, garlic in greased 2-qt casserole. Blend rest of ingredients. Mix into rice. Sprinkle with paprika. Bake at 350 deg F about 45 minutes, or until it’s like a soft custard.

This tastes great, is easy and goes w/ fish
1 T. unsalted butter
1/4 c. diced onion
1 c. long-grain rice
1 can(15 oz.) crushed pineapple, undrained
3/4 c. pineapple juice (6oz.)
1/2 c. water
1 t. kosher salt (less if table salt)
1/4 c. minced cilantro
In a sauce pan, over medium-high heat, melt the butter. Add onion and saute 3 minutes, stir in the rice and saute 1 minute to coat the rice.
Add the pineapple, pineapple juice, water and salt. Bring to a boil, cover, reduce heat to low and simmer 25 minutes or until all liquid is absorbed.
F-l-u-f-f the rice with a fork, then stir in the cilantro.
Makes 4 cups.
