I am.

I want to make some rice to accompany our salmon tonight. I'm looking for easy, but tasty ideas.

How about asking him to make the side dish since he doesn't like rice?

@house_cat   I cook brown rice & add chopped walnuts & a bit of low salt soy sauce.DH & son love it.

I'm a big relyer on Campbells Cream of Mushroom Soup.  There, I said it publicly.  Nothing easier and we both like the taste on or in about anything.

turn your rice into more of a pilaf. use broth instead of water, you could add a big spoon of pesto, some sun dried tomatoes to the water. fresh chopped herbs? i serve rice alot. dh can't have potatoes. add a pkg of one of the dry soups into the water, knorr veg is good.

What do you do with it regarding the rice?

I love Mushroom Risotto. It is a bit time consuming to make. But it tastes great.

Yellow rice?

I use Mahatma pre-packaged.  DH loves it (and no, it's not an A+ for nutrition, all you hawks out there).  Of course if you have the ingredients for scratch-made, by all means.

It adds great color to the plate.  Spinach, parsley, peas all add contrast, in or beside.  Or on top.
