Fruit Fresh is definately preferred for enzamatic browning. I have always used this fixing fruit trays for events.

@DiamondGirly - I'll never forget the Thanksgiving that my "very opinionated" sister-in- law tried to tell me that cutting potatoes the night before would make them brown. I know that! Now, I grew up in a large family and we did this all the time and placed them fully covered in a pot of water in the fridge. I was making 5 lbs. of mashed potatoes and said, "Trust me, covering them in water won't make them turn brown." She was amazed that it worked. Apparently, she didn't know to put them into water.
