Help: I need easy Beef & Broccoli recipe like Chinese take-out

Since we are craving chinese and of course they're all closed.

 

I thought I'd try to make our favorite Beef & Broccoli.  I have the basic ingredients & but don't want to have to go to store 

 

Anyone have a easy recipe they care to share.  I have gone on Pinterest, internet but they all need alot of ingredients, i.e., ginger, wine --

SLOW COOKER BEEF AND BROCCOLI

A Chinese take-out favorite that can be made right in the slow cooker. It doesn’t get easier than that!

INGREDIENTS:
  • 1 cup beef broth
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup oyster sauce
  • 1/4 cup Imperial Sugar Light Brown Sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 2 pounds boneless beef chuck roast, thinly sliced
  • 2 tablespoons cornstarch
  • 2 heads broccoli, cut into florets
DIRECTIONS:
  1. In a medium bowl, whisk together beef broth, soy sauce, oyster sauce, sugar, sesame oil and garlic.
  2. Place beef into a 6-qt slow cooker. Add sauce mixture and gently toss to combine. Cover and cook on low heat for 90 minutes.
  3. In a small bowl, whisk together 1/4 cup water and cornstarch.
  4. Stir in cornstarch mixture and broccoli into the slow cooker. Cover and cook on high heat for an additional 30 minutes.
  5. Serve immediately.

Broccoli Beef

Ingredients

  • 3/4 pound flank or sirloin, sliced thinly across the grain
  • 3/4 pound broccoli florets
  • 2 tablespoons high-heat cooking oil
  • 2 cloves garlic, very finely minced or smushed through garlic smusher
  • 1 teaspoon cornstarch, dissolved in 1 tablespoon water

For the beef marinade

  • 1 teaspoon soy sauce
  • 1 teaspoon Chinese rice wine (or dry sherry)
  • 1/2 teaspoon cornstarch
  • 1/8 teaspoon freshly ground black pepper

For the sauce

  • 2 tablespoons oyster sauce
  • 1 teaspoon Chinese rice wine (or dry sherry)
  • 1 tablespoon soy sauce
  • 1/4 cup chicken broth

Method

Marinate the beef: Stir together the beef marinade ingredients in a medium bowl. Add the beef slices and stir until coated. Let stand for 10 minutes

Prepare the sauce: Stir together the sauce ingredients in a small bowl.

Blanch the broccoli: Cook the broccoli in a small pot of boiling, salted water until tender-crisp, about 2 minutes. Drain thoroughly.

Heat a large frying pan or wok over high heat until a bead of water sizzles and instantly evaporates upon contact. Add the cooking oil and swirl to coat.

Add the beef and immediately spread the beef out all over the surface of the wok or pan in a single layer (preferably not touching). Let the beef fry undisturbed for 1 minute.

Flip the beef slices over, add the garlic to the pan and fry for an additional 30 seconds to 1 minute until no longer pink.

Pour in the sauce.  Add the blanched broccoli and bring to a boil.

Pour in the dissolved cornstarch and cook, stirring, until the sauce boils and thickens, 30 seconds.

thank you!  @Zhills do you think it will make a big difference if I don't have the chinese rice wine?  I don't have sherry either OR do you think I out to get dressed and go get it?

 

Both recipes look easy and good.  @mizree

I take a non-traditional spin that uses ground beef, broccoli, and ramen noodles:

 

1 lb ground beef 

1 tbsp + 1 tsp olive oil

1 tbsp sesame oil

1 tbsp ginger paste (I buy in small jar in produce dept.)

2 tsp minced garlic

5 cups chopped broccoli florets

3 1/2 cups chicken broth

4 3-oz pkgs ramen noodles broken into chunks (I throw away seasoning packets)

1/3 cup soy sauce

1/4 cup hoisin or oyster sauce (can use ketchup in a pinch)

1 tbsp brown sugar

1 tbsp rice vinegar

 

Whisk soy sauce, hoisin sauce, brown sugar, and rice vinegar in dish.

Heat 1 tbsp olive and sesame oil in saucepan until rippling hot.  Brown beef until mostly cooked through, 3-4 minutes.  Save for later on plate.

In same pot, stir in 1 tsp olive oil, ginger paste, and garlic over heat for 30 seconds.  Stir in broccoli and broth.

Stir in chunks of ramen and simmer until ramen and broccoli are tender.  

Stir in cooked beef and sauce mixture.  Simmer until heated through.

I have used cider vinegar in place of rice vinegar in a pinch.

thank you for that tip.  I called a good friend of mine who is a wonderful cook she had sherry.  She also let me know you can "substitute" dry vermouth for sherry.  

 

Good to know but once Chinese places reopen (and we feel ok to go) they can make it😉

 

But then again, spouse has enjoyed the chinese food I've been making 🙂

@homedecor1.  Sounds like you are on a roll.  Hope you and your spouse love it!

 

The Easy recipe using Cream of Broccoli soup is really good and was one of our favorite week night meals.

Top with the canned noodles for extra zing!
