Help! Baking question Re: eggs

Hi,  need fast help here.  Googled and do not understand the answers!

 

I'm baking some muffins that require 2 jumbo eggs - however I messed up and have large eggs.  What do I do? How many large eggs should I use to compensate?  3?    Please help Smiley Happy  thanks

  • Small: (about 1.5 ounce per egg)
  • Medium:  (about 1.75 ounce per egg)
  • Large:  (about 2 ounces per egg)
  • Extra-Large:  (about 2.25 ounces per egg)
  • Jumbo:  (about 2.5 ounces per egg)

Add 1/2 large egg to 2 large eggs to equal 2 jumbos

I seriously doubt 1/2 egg would make a significant difference but you could beat it with a fork then guess at adding half of it if you want to be precise.  You're not assembling an atomic bomb.

Lol!  In a way, I feel like I am - feeling the weight of the world!  Yes, ok, I'm being ridiculous I guess - just feeling out of sorts today and haven't baked anything for a very long time. and hate that I messed up buying the ingredients.  Plus I don't know what I don't know about baking - want the muffins to be good!

@moonandthestars   Just barely mix the batter.  Overworking muffin batter makes them less than tender.  Baking does take constant practice, I've discovered so I understand.

Break a large egg into a custard cup and break up with a fork.  Use 1/2.
