Hearty Lentil Soup (CI)

Amount Measure Ingredient -- Preparation Method

3 slices bacon, chopped
1 large onion, finely diced
2 each carrots peeled and diced
3 cloves garlic clove, chopped
1 can (15 oz) diced tomato
1 bay leaf
3 teaspoons thyme
1 cup lentils, rinsed
1 teaspoon salt
1/2 cup dry white wine
4 1/2 cups chicken broth
1 1/2 cups water
1 1/2 Tbsp Balsamic vinegar

1. Fry bacon until crisp

2. Add onions & sauté until soft

3. Add garlic, cook until fragrant

4. Add tomatoes, thyme, & bay leaf, cook until fragrant

5. Add lentils & salt & pepper cook until lentils have darkened (8-10
minutes)

6. Add wine, bring to a simmer

7. Add broth & water, bring to a boil, then simmer until lentils are tender

8. Puree 3 cups of soup & add back to the pot

9. Stir in vinegar & heat.

10. Serve with parley garnish.
