1 pkg mild Italian sausage links (5-6 links depending where you shop)
1 chopped onion
2 cloves of minced garlic (optional)
1 15. Oz can cannelloni beans
1 14.5 oz can diced tomatoes -( I used Italian seasoned diced tomatoes)- the recipe called for stewed which I used the first time, and then I went with the Italian flavored diced.
1-cup (any) soup pasta, uncooked
2 cartons of chicken stock
Xtra water (if needed)
chopped kale leaves or baby spinach
- salt & pepper to taste
- just cut up the Italian sausage in small bite size pieces and brown with the onion. Add the stock, tomatoes, and bring to a nice simmer. Add beans, kale, uncooked pasta, garlic, and simmer for about 15 minutes.
It really is easy and very tasty.

This sounds great, I've got some turkey Italian sausage in the freezer, I just need to buy spinach and some more stock. I will definitely make it this week.

I make something like that with chicken or turkey sausage, it's good.

The only thing to be sure to watch is the sodium as 3 of the ingredients will possibly have sodium.
